Holeman and Finch Burger: Linton Hopkins' Atlanta Double Stack
Holeman and Finch's double cheeseburger in 2026: address, hours, the build, and how Linton Hopkins' 24-a-night special became America's No. 1.

The Holeman and Finch burger is a double-stack cheeseburger that Atlanta chef Linton Hopkins created in 2008. You order it today at Holeman and Finch Public House, 1201 Peachtree Street NE, Building 400, Colony Square, in Midtown Atlanta. Forget the 10 p.m. scramble: the restaurant’s own site now reads “Burger Time, All The Time”, so the burger is on whenever the kitchen is. Want it without a sit-down meal? H&F Burger, the group’s fast-casual counter at Ponce City Market, serves the same double cheeseburger.
A word on method first. I have not eaten this burger at Colony Square yet, so this is a sourced profile, not a review. I built it from the restaurant’s site, the Hopkins and Company group site, and dated reporting in Atlanta Magazine, Resy, Rough Draft Atlanta, The Daily Meal and Food Republic. Every current fact was rechecked on October 10, 2026. Where something is history, or where I could not confirm it, I say so.
Holeman and Finch at a glance: address, hours and the burger today
Holeman and Finch Public House is a Midtown Atlanta gastropub at Colony Square, open seven days a week, with its double-stack cheeseburger as the permanent signature dish.

The hours above come from holeman-finch.com. The Colony Square directory disagrees: Sun–Wed until 10 p.m., Thu–Sat until midnight, and a different street number and suite. I trust the restaurant’s own site over a landlord’s directory, but I’d still check before you drive over.

What is on the Holeman and Finch burger
The Holeman and Finch burger is two 4-ounce griddled patties of chuck and brisket with American cheese, bread-and-butter pickles and red onion on a toasted house-baked bun.
The build below is the one documented by The Daily Meal in 2019 and Food Republic in 2011. No 2026 primary source confirms every detail at Colony Square, so read it as the documented recipe, not a guarantee of tonight’s plate.
| Component | Documented build (2011–2019 sources) |
|---|---|
| Patties | Two 4 oz patties, freshly ground |
| Beef | Pasture-raised chuck and brisket |
| Seasoning and cooking | Salt only, griddled until crusty |
| Cheese | American |
| Toppings | Bread-and-butter pickles, red onion |
| Bun | House-baked pain de mie, buttered and toasted |
| Sides | Fresh-cut fries |
| Condiments | House-made ketchup and mustard |

Read the spec sheet and the restraint jumps out. No sauce. No lettuce, no tomato. Two thin griddled patties, melted American and sharp pickles carry the whole thing, and I like that bet: it leaves the beef and the crust nowhere to hide, which most gastropub burgers avoid by piling on toppings. The pain de mie is a soft, tight-crumbed sandwich loaf, nearer a bakery bun than a supermarket one. To try that style at home, our homemade burger buns recipe walks through an enriched dough.
Is the Holeman and Finch burger still limited to 24 a night at 10 p.m.?
No. The 24-burgers-at-10-p.m. ritual is historical; the official site now promotes “Burger Time, All The Time”, meaning the burger is available throughout service.
The bullhorn story is still the first thing people tell about this burger, so the dates matter. Here is how the rule changed, according to Atlanta Magazine and Food Republic:
- 2008: Hopkins launches the double stack as a late-night item. Only 24 are made, released at 10 p.m., and announced with a bullhorn: “It’s burger time!”
- Later: the burger moves to the regular dinner menu with no limit.
- September 10, 2016: chef de cuisine Spencer Gomez (formerly of Gunshow) and the Hopkinses bring back a cap of 24 burgers each at lunch, brunch and dinner, with no 10 p.m. wait. The reason given was limited kitchen space.
- 2026: the official site says “Burger Time, All The Time”.

One question I could not settle: does a per-service cap still apply at Colony Square? All-day availability doesn’t prove the cap is gone. If the burger is the only reason you’re going, call 404-948-1175 first.
Holeman and Finch timeline: from Buckhead to Colony Square
Holeman and Finch opened in Buckhead in 2008, closed there in 2020, and reopened at Colony Square in Midtown on February 9, 2023.
I couldn’t find the whole story in one place, so I pieced it together, with a source on every line:
| Year | Event | Source |
|---|---|---|
| 2004 | Linton and Gina Hopkins open Restaurant Eugene in spring | Food GPS |
| 2008 | Holeman and Finch Public House opens at 2277 Peachtree Rd NE, Brookwood area, Buckhead; the 24-burger 10 p.m. special begins | Hopkins and Company, Atlanta Eats, Atlanta Magazine |

| Fall 2015 | H&F Burger opens at Ponce City Market | Hopkins and Company, UrbanDaddy |
| 2016 | 24-per-service cap at lunch, brunch and dinner | Atlanta Magazine |
| 2019 | Restaurant Eugene closes in August; The Daily Meal names the H&F cheeseburger No. 1 in America | Atlanta Magazine, The Daily Meal |
| 2020 | The Buckhead location closes; move to Colony Square announced | Resy, Rough Draft Atlanta |
| Feb 9, 2023 | Reopening at Colony Square, Midtown, after more than two years closed | Resy |

| Spring 2027 (announced) | Linton’s Bar & Grill and The Buttery planned at 2970 Peachtree Rd, Buckhead | Rough Draft Atlanta, Hopkins and Company |
I have not found a confirmed reason or month for the 2020 Buckhead closure, so I state only that it closed that year and moved. Resy tells the story of the 2023 reopening.

Who is Linton Hopkins? The chef behind the Holeman and Finch burger
Linton Hopkins is an Atlanta-born chef and restaurateur who co-founded Holeman and Finch with his wife Gina Hopkins and won the 2012 James Beard Award for Best Chef: Southeast.
Hopkins graduated from Emory University in anthropology in 1992 and from the Culinary Institute of America in 1993, according to Emory Magazine. He trained in New Orleans, with an externship at Mr. B’s Bistro and time at The Grill Room at the Windsor Court Hotel. He then became chef de cuisine at D.C. Coast in Washington, per a Food GPS interview.

Back in Atlanta, he and Gina opened Restaurant Eugene in spring 2004. Holeman and Finch followed in 2008 as its casual counterpart. The James Beard Foundation recognized him in 2012, in a rare tie with Hugh Acheson.

Gina Hopkins, co-founder and co-owner
Gina Hopkins co-founded Holeman and Finch and Restaurant Eugene with Linton, and she remains co-proprietor through Hopkins and Company. Every source I checked credits the restaurants to the couple, not to the chef alone. She belongs at the top of this story, not in a footnote.
The Hopkins and Company restaurants in 2026
Hopkins and Company runs four restaurants in 2026, per hopkins-co.com:
- Holeman and Finch Public House – Colony Square, Midtown
- C. Ellet’s Steakhouse – The Battery Atlanta, opened 2017
- Hop’s Chicken – Ponce City Market, opened 2015
- H&F Burger – Ponce City Market, opened 2015
On September 17, 2026, Rough Draft Atlanta reported that the couple plans Linton’s Bar & Grill and a reopened The Buttery for spring 2027 at 2970 Peachtree Rd in Buckhead, the former Brio Tuscan Grille space. The Buttery, their bakery-cafe, closed in 2024 after four years in Morningside-Lenox Park. Until the doors open, treat 2027 as an announcement, nothing more.
Holeman and Finch vs H&F Burger: which one should you visit?
Holeman and Finch is the sit-down gastropub at Colony Square; H&F Burger is the fast-casual counter at Ponce City Market built around the same double cheeseburger.
| Holeman and Finch Public House | H&F Burger | |
|---|---|---|
| Format | Sit-down gastropub | Fast-casual |
| Location | Colony Square, Midtown | Ponce City Market |
| Opened | 2008 (Colony Square since 2023) | Fall 2015 |
| Burger | Famous double-stack cheeseburger | The double cheeseburger |
| Fries | Fresh-cut fries (documented 2019) | Twice-fried fries |
| Beyond burgers | Charcuterie, seasonal vegetable plate, sticky toffee pudding, oysters | Burger-focused |
| Best for | A full meal, drinks, happy hour | A quick burger at the market |
Hopkins and Company says H&F Burger grew out of the “24 cheeseburgers served every night at 10 p.m.” special. The space was about 1,543 sq ft at opening, per UrbanDaddy. My pick: book Holeman and Finch when you want the burger with oysters, a drink and the room around it; go to Ponce City Market when the burger is the whole plan. Older articles also place H&F Burger at Truist Park, Turner Field or the airport. The group lists none of those in 2026, so I name only Ponce City Market as current.

Why the Holeman and Finch burger is one of the best burgers in Atlanta
The Holeman and Finch burger earned its reputation through scarcity, a strict build and a national ranking: The Daily Meal named it No. 1 of its 101 Best Burgers in America in December 2019.
Scarcity made the legend. The kitchen and the ranking kept it alive:
- The legend. Twenty-four burgers, a bullhorn and a 10 p.m. release turned it into a local ritual from 2008, documented by Atlanta Magazine and Food Republic.
- The kitchen behind it. It comes from a James Beard–winning chef whose gastropub works on a “whole animal, whole vegetable” philosophy, with house-ground beef, house bread and house condiments.
- The national award. The Daily Meal ranked it the best burger in America in 2019, at $17 at the time.
Bar chart of the Holeman and Finch burger price over time: $12–14 in early reports, $17 in The Daily Meal’s December 2019 ranking, 2026 price not confirmed (data: The Daily Meal, Food Republic) (Chart: Burger Breton, data from The Daily Meal (2019) and Food Republic (2011))
My verdict and how I reached it
My verdict: if you eat one chef’s burger in Atlanta, make it this one. A James Beard–winning kitchen, a No. 1 national ranking and an unchanged, sauce-free build carried across two locations add up to a record few burgers anywhere can match. I am not giving it a score, and that’s deliberate: a number belongs to a tasting, and I haven’t sat down at Colony Square yet. My method: official restaurant and group sites for current facts, dated local and national press for history, every claim checked on October 10, 2026. Anything I could not source stayed out, including the current price and today’s chef de cuisine.
