Philippe Chevrier's Burger in Geneva: Denise's, Not Châteauvieux
Philippe Chevrier's burger isn't at Châteauvieux. It's at Denise's in Geneva's Globus Food Hall: address, hours, CHF 19–39 prices and the chef's story.

Philippe Chevrier’s burger in Geneva is at Denise’s Art of Burger, a counter he founded in the Food Hall of the Globus department store at Rue du Rhône 48 and named after his mother, Denise. Burgers on the official menu cost CHF 19 to CHF 39 (CHF 18 for the kids’ burger), and Denise’s is open Monday to Saturday. His famous restaurant, Domaine de Châteauvieux in Satigny, is not a burger place. It is a one-Michelin-star fine-dining house about 10 km (6 miles) from the city, and that is where his reputation comes from.
This guide puts the chef, the starred restaurant and the burger counter in one place. I’m Alex, and I edit the restaurants section here. On 11 October 2026 I checked every price, opening hour and star count below against official sources, and each fact names its source. I haven’t eaten at Denise’s for this piece yet. So no tasting notes, no score: those come after a dated visit.
A correction first: Châteauvieux is not a burger restaurant
Domaine de Châteauvieux is a Relais & Châteaux fine-dining restaurant with guest rooms, and there is no burger on its menu. Look up a Michelin chef’s burger in Geneva and Chevrier’s name points you to Satigny. That’s the wrong address. The burger connection is real, but it runs through his city venues: Denise’s Art of Burger first, his steakhouse Chez Philippe a distant second.
So this guide is built around Denise’s. Châteauvieux stays in because it explains why a burger ‘by Chevrier’ carries weight in Geneva. Gault&Millau POP lists the counter as ‘le burger par Chevrier’, Chevrier’s burger. The name does the selling.
Who is Philippe Chevrier?
Philippe Chevrier is the Geneva chef who took Domaine de Châteauvieux to two Michelin stars and was named Gault&Millau’s Swiss chef of the year in 2002. He was born in Geneva on 17 December 1960 (Wikipedia).
Training and career
Chevrier trained at Le Chat Botté, the restaurant of Geneva’s Hôtel Beau-Rivage, from 1976 to 1979. In 1984 he worked under Frédy Girardet in Crissier, one of the great Swiss kitchens of the era (swissinfo). That same year he made his first trip to New York, which later shaped his steakhouse, Chez Philippe.
He has run Châteauvieux since the late 1980s. The exact years depend on who you ask. Relais & Châteaux and the Michelin Guide say he has been owner-chef since 1986. Wikipedia and swissinfo say he became chef in 1987 and owner in 1989, and immobilier.ch also gives 1989.
Stars, scores and awards
Châteauvieux earned its first Michelin star in 1991 and its second in 1994. In 2002 Gault&Millau named Chevrier Swiss chef of the year, with a score of 19/20 (swissinfo). The restaurant’s official site says it has held that 19/20 for more than 20 years, and lists memberships of Grandes Tables du Monde and Grandes Tables de Suisse.
Consulting and a group of Geneva venues
Chevrier launched Philippe Chevrier Consulting in 2024 and says he has developed ‘around fifteen concepts’ (philippe-chevrier.com). The group currently lists six venues: Domaine de Châteauvieux, Chez Philippe, Café des Négociants, Denise’s Burger, Les Aviateurs and Le Cosmopolite.
Domaine de Châteauvieux in 2026: Michelin star and who runs the kitchen
Domaine de Châteauvieux holds one Michelin star in 2026. It lost its second star in the 2023 Swiss guide after holding it for 29 years. The Michelin Guide’s live page, which I checked on 11 October 2026, lists one star, modern French cuisine and a €€€€ price band. The page doesn’t show the edition year, so I’ll recheck it when the next Swiss guide comes out.
Michelin stars at Domaine de Châteauvieux, Satigny: first star in 1991, second in 1994, back to one star in the 2023 Swiss guide after 29 years with two (Michelin Guide page checked 11 October 2026). Milestone years shown, not to scale. Chevrier didn’t take the 2023 demotion quietly. He called the way it was handled ‘a total lack of class’ and said: ‘We work for the customers, not for Michelin’ (Reporter Gourmet, 31 October 2023).
Who cooks at Châteauvieux now?
François Periers has been chef de cuisine at Châteauvieux since 1 September 2024, and Philippe Chevrier is the owner. Periers was born in 1984 in Charenton-le-Pont, France. He became chef at Chez Philippe in 2020 and its head chef in 2023, then moved to Châteauvieux (lesrestos.com). Relais & Châteaux also names Periers head chef and Chevrier owner. The Michelin page still presents Chevrier as chef-patron, so he remains the face of the house.
For many years Damien Coche ran the Châteauvieux kitchen alongside Chevrier. In November 2021 immobilier.ch called him ‘l’indétrônable’, the one nobody could unseat. He doesn’t appear in current team listings.

Denise’s Art of Burger: Philippe Chevrier’s burger in Geneva
Denise’s Art of Burger is the burger counter Chevrier founded in the Globus Food Hall in central Geneva, and its menu runs from a CHF 19 vegetarian burger to a CHF 39 Wagyu. It’s the only place in the group built entirely around burgers.

Who was Denise?
Denise is Philippe Chevrier’s mother, and the counter is named after her. The official site, Gault&Millau POP and Time Out all mention the tribute. The menu leans on Swiss staples more than American ones: hand-chopped beef, Gruyère on the Basic, house sauces.
Address and opening hours
Denise’s is inside the Food Hall of the Globus department store. The entrance is on Place du Molard, at Rue du Rhône 48, 1204 Geneva, tel. +41 22 510 39 79 (denises-burger.ch).

Menu and prices in CHF
A burger at Denise’s costs CHF 19 to CHF 39 on the official menu, and the kids’ burger is CHF 18. Those are the prices on the official ‘La carte’ page, checked on 11 October 2026 (denises-burger.ch/en/la-carte). Some third-party listings still quote CHF 15–36, so one of the two is out of date. Check the board when you order.
Burger prices at Denise’s Art of Burger in Geneva, in Swiss francs: CHF 18 for the kids’ burger up to CHF 39 for the Wagyu Burger and Lobster Roll, with the CHF 29 To Go combo and the CHF 34 Le Chasseur venison burger (official menu, checked 11 October 2026) (Chart: Burger Breton, data from denises-burger.ch/en/la-carte, rendered with QuickChart (to be exported and hosted locally), CC BY 4.0 Burger Breton)
| Burger | Price | What’s in it |
|---|---|---|
| Basic | CHF 22 | Beef, homemade BBQ sauce, caramelised onions, lettuce, tomato, Gruyère |
| Bacon & Cheese | CHF 23 | Beef, bacon, cheese |
| Double Beef | CHF 28 | Short rib and brisket double patty, Gruyère, Denise’s sauce |
| Wagyu Burger | CHF 39 | Wagyu beef |
| Lobster Roll | CHF 39 | Sesame and cuttlefish-ink bun, lime remoulade, avocado purée |
| Vegetarian | CHF 19 | Meat-free burger |
| Kids’ burger | CHF 18 | Smaller burger for children |
| Foie gras supplement (50 g) | + CHF 12 | Added to any burger |

On paper, the best-value order is the Denise’s To Go combo at CHF 29: a burger with hand-chopped beef, Gruyère, tomato and the signature sauce, plus fries, a drink and a cookie. That’s CHF 7 more than the Basic on its own. Gault&Millau POP also mentions a hot dog, cheesecake and cookies on the menu.
Denise’s doesn’t publish where its beef comes from or who bakes its buns. I’ve asked, and I’ll add the answer here when I have it.
The seasonal burger: Le Chasseur
The current ‘Burger du moment’ is Le Chasseur, a venison burger served with fries for CHF 34. It comes on a brioche bun with slow-cooked pulled venison, red cabbage and Granny Smith apple in cider vinegar, onion and celeriac chutney, crispy celeriac, oyster mushrooms, a lingonberry braising jus and pears poached in red wine. That’s the Swiss autumn game menu, la chasse, stacked in a bun. It’s the item that shows the Châteauvieux influence most, and it’s the one I’ll order first.

Who runs Denise’s today?
Denise’s is run day to day by restaurant director Rodolphe Legal and head chefs Maxime Lothoz and Dylan Bernaz. The official site calls Legal ‘a long-time collaborator of Chef Philippe Chevrier’ and names both chefs as shareholders. Chevrier founded Denise’s and it appears in his group’s listing, but I couldn’t confirm whether he is still the majority owner.
Chez Philippe: the steakhouse behind the burger
Chez Philippe is Chevrier’s New York-style steakhouse at Passage des Lions, Rue du Rhône 8, 1204 Geneva, and it serves burgers alongside its grills. It opened in 2015, inspired by his first trip to New York in 1984. The grill is open every day, 11:30–15:00 and 18:30–22:30 (chezphilippe.ch).
Periers cooked here before he took over at Châteauvieux, which tells you how closely the group’s kitchens are connected. Want a burger with table service and a steakhouse room? Go to Chez Philippe. For a quick lunch, Denise’s is a short walk along the same street.
Where Denise’s fits among the best burgers in Geneva
Denise’s is Geneva’s chef-made burger: the one with a Michelin pedigree, Gruyère on the Basic and options like wagyu, lobster and foie gras. Time Out called it a ‘five star burger’ in its 7 October 2015 review and included it in its ‘Top burger bars in Geneva’ list on 18 October 2022, next to Holy Cow!, Inglewood and Hamburger Foundation.
Neither Time Out text names a burger or gives a price, and the review is now 11 years old. That’s why the dated menu above matters. Falstaff’s Street Food Guide Switzerland 2025/2026 picks Pretty Patty, Hamburger Foundation and Sando in Geneva, but not Denise’s.
Holy Cow! is the Swiss chain to compare it with. I’ve covered its home city in my guide to Holy Cow! and the best burgers in Lausanne, and its expansion in Holy Cow! Basel: address, hours and prices. The chain has two Geneva locations. All the Geneva burger addresses I verify will go on the best burger in Geneva hub.
My take before visiting
On paper, Denise’s is the place for a Michelin chef’s burger in Geneva at a counter price: CHF 22 for the Basic with Gruyère, CHF 29 for the full To Go combo. I’m less sold on the CHF 39 Wagyu. Wagyu’s fat tends to get lost in a burger, and for CHF 5 less Le Chasseur comes with fries and far more of the Chevrier cooking in it. A dated verdict, what I ordered and a rating with its method will follow my visit. Until then, read this as a verified guide, not a review.

Sources and method
I wrote this guide from official sources and dated press coverage, all checked on 11 October 2026: the Denise’s official site and menu, the Domaine de Châteauvieux site, the Michelin Guide, Relais & Châteaux, Chez Philippe, Gault&Millau POP, Geneva Tourism, lesrestos.com, Reporter Gourmet, swissinfo and immobilier.ch. Where sources disagree, as they do on the year Chevrier took over Châteauvieux, I give each version. I’ve left out Denise’s opening date because I couldn’t confirm it with the restaurant.
