Junk Burger Lyon is the Lyon branch of Junk Smash Burgers, a Paris-born chain co-founded by Majed Mansour and Wissem Ben Ammar. You’ll find it at 22 rue Ferrandière, 69002 Lyon, on the Presqu’île between Bellecour and Cordeliers. It opened in mid-June 2023. The menu is one smash burger in five sizes, from S (one patty) to XXL (five), on a toasted brioche bun with American cheese and the house Junk sauce. And one correction up front: Majed Mansour is not the chef of Junk Lyon. He co-founded the brand, and no source puts him in the Lyon kitchen.
I cover restaurants in France for Burger Breton. On 16 October 2026 I checked the Lyon branch against Junk’s official locations page, the Lyon food press from the 2023 opening, and French and international trade press. I haven’t eaten at the Lyon counter yet. So this is a profile, not a scored review, and every fact below carries its source and date.

Who is behind Junk in Lyon? Majed Mansour, Wissem Ben Ammar and a correction
Junk Lyon belongs to Junk Smash Burgers, the chain founded by Franco-Tunisian friends and business partners Majed Mansour and Wissem Ben Ammar (The Caterer, May 2026; Arab News, September 2025). Vivre Lyon named both founders in its 4 July 2023 piece on the Lyon opening.
I set out to write a chef profile of Majed Mansour at Junk Lyon. The sources don’t support one. Mansour appears everywhere as a co-founder and entrepreneur, never as a chef. Only one source calls anyone a chef: the Dubai food site nogarlicnoonions (1 October 2025) describes Wissem Ben Ammar as a ‘self-taught chef’. That’s a single source, and Junk has never said publicly who does what.
No source says whether Mansour was at the Lyon opening or runs the branch day to day. None names the Lyon manager or head cook. I couldn’t confirm whether Lyon is company-owned or a franchise, either. Read this as a portrait of the founders and their brand through its Lyon outpost.
What do the founders say about Junk?
The founders pitch Junk as a burger for purists. In April 2024, Majed Mansour told the French trade magazine Zepros that Junk is aimed ‘first and foremost at smash burger purists, with few ingredients and maximum flavour’.
In September 2025 the pair told Arab News: ‘At Junk, there aren’t dozens of options: just one burger, available in different patty sizes, with fries and our signature panko.’ Then: ‘We never tried to please everyone.’ I like that line. It explains the whole menu.
From Graine couscous bar to Junk Lyon: the timeline
Before Junk, Mansour and Ben Ammar ran Graine, a couscous bar founded in 2013. During Covid they changed course and launched Junk in Paris in 2021 as a delivery-only brand (Restaurant Online, October 2024; Zepros, April 2024). The full Paris story is in my Junk Smash Burgers Paris profile.
| Date | Milestone | Source |
|---|---|---|
| 2013 | Graine couscous bar founded | Restaurant Online |
| 2021 | Junk launches in Paris as a delivery-only brand | Zepros, The Caterer |
| Oct 2022 | First restaurant opens at 114 rue Montmartre, Paris 2e | Zepros, Junk official site |
| Mid-June 2023 | Junk Lyon opens at 22 rue Ferrandière | Radio Scoop, Lyon Femmes |
| Apr 2024 | 7 Junk restaurants: 3 in Île-de-France, 4 in the regions (Lille, Lyon, Bordeaux, Strasbourg) | Zepros |
| Mar 2025 | 14 Junk restaurants open; 2024 revenue €20 million | Zepros |
| Oct 2026 | 20 restaurants in France across 9 cities, 3 in the UK, 1 in the UAE | Junk official site |
By April 2024, Lyon was one of only four Junk branches outside Île-de-France. Radio Scoop reported in June 2023 that Lyon came right after Paris and Neuilly, which would make it Junk’s first regional branch. No second source confirms the order, so I won’t make that claim.
Line chart of Junk restaurant numbers: 7 in April 2024 and 14 in March 2025 (Zepros), then 20 in France plus 3 in the UK and 1 in the UAE, 24 in all, on 16 October 2026 (official site). Junk Lyon opened in mid-June 2023. (Chart: Burger Breton, CC BY 4.0, data from Zepros (April 2024, March 2025) and junkburgers.com/locations (checked 2026-10-16), rendered with QuickChart)
The group behind Junk
Junk belongs to a restaurant group that Vivre Lyon called My Belly (or InMyBelly). The group also runs Graine, Meatpacking and Puffy Cookies. In April 2024, Zepros counted 18 points of sale and 170 employees across the group, with €11.5 million in revenue for 2023 and €23 million projected for 2024. By March 2025, Zepros put Junk’s 2024 revenue at €20 million and its 2025 target at €30–32 million. I couldn’t confirm whether Graine still operates in 2026.
The Junk Lyon menu: one smash burger, S to XXL
At Junk Lyon, the size letter is the patty count: S has 1 smashed patty, XXL has 5. Every size is built the same way, with a toasted French brioche bun, premium American cheese and the house Junk sauce (official menu; Lyon Femmes, July 2023).
| Burger | Smashed patties | Build |
|---|---|---|
| S | 1 | Brioche bun, American cheese, Junk sauce |
| M | 2 | Brioche bun, American cheese, Junk sauce |
| L | 3 | Brioche bun, American cheese, Junk sauce |
| XL | 4 | Brioche bun, American cheese, Junk sauce |
| XXL | 5 | Brioche bun, American cheese, Junk sauce |
| Truffle | 2 | Cheese, house-fried onions, truffle sauce |
| Veggie | Meat-free patty | See the vegetarian section below |
Extras are jalapeños, pickles and crispy or caramelised onions. On the side: panko fried chicken and fries. Dessert is cookies from Puffy, the group’s sister brand (official site).
My take: the size ladder is the clever bit. You answer one question, how hungry you are, and the menu does the rest. What I can’t tell you yet is whether five thin patties keep their crust stacked in an XXL. That needs a visit.

The Truffle Burger
The Junk Truffle Burger is a two-patty smash burger with cheese, house-fried onions and truffle sauce. When Lyon Femmes tested Junk Lyon in July 2023, it was still a monthly special. Junk’s own site says it began as a limited edition and became a permanent item.
Is there a vegetarian burger at Junk Lyon?
Yes, Junk has a Veggie burger. In July 2023, Lyon Femmes described the Lyon version as a cauliflower patty with potatoes, emmental and panko. I couldn’t confirm the recipe is unchanged, so ask at the counter.
What beef does Junk use?
Junk says its beef comes from two French cattle breeds, Charolais and Limousin (official site, checked 16 October 2026). In Lyon that lands close to home: Charolais is the breed of southern Burgundy, and our Lyon burger hub lists it among the regional products to look for on a Lyon burger.

How much does a burger cost at Junk Lyon?
I couldn’t verify current Junk Lyon prices. Rankeat gives a band of about €10–20 per person. Several directories show €5.90 for an S and €16.90 for an XXL as Lyon prices. They aren’t: those are Paris prices from November 2022, published by Sortir à Paris before the Lyon branch even existed.
So don’t budget on them. Check the Lyon menu on click-and-collect, Deliveroo or Uber Eats before you go. I’ll add dated Lyon prices here once I’ve checked them myself.

Is Junk Lyon halal?
Junk Lyon’s halal status is unconfirmed. TikTok creators such as @tuviensmanger described it as halal in 2023, and third parties say the same about other branches. But Junk’s official site says nothing about halal, and I found no certifying body. If it matters to you, call +33 9 55 76 76 68 before you order.
Best smash burgers in Lyon: how Junk compares
Junk is the chain option among Lyon’s smash burger spots: one fixed recipe, French beef, a 1-to-5 patty ladder and long weekend hours. It doesn’t appear in Lyon Secret’s September 2025 list of the best burgers in Lyon. Here’s how it sits next to the names that keep coming up in the local press and directories.
A smash burger is a ball of ground beef pressed flat onto a very hot griddle so it forms a thin, crisp crust. To try the technique at home, our Shackburger copycat recipe walks through it, and our Sonic bacon smasher copycat takes it further.

| Spot | Where in Lyon | What stands out | Source |
|---|---|---|---|
| Junk Lyon | 22 rue Ferrandière, Lyon 2 | One burger, S to XXL (1–5 patties), Charolais and Limousin beef, Truffle Burger | Junk official site |
| Smash Burger Joint | 159 bd de la Croix-Rousse, Lyon 4 (Lyon Secret); Wanderlog lists 44 rue du Sergent Blandan, Lyon 1 | Dedicated smash burger bar in Lyon Secret’s 2025 list | Lyon Secret, Wanderlog |
| Smatch & Beef | 2 place Julie Daubié, Lyon 8, and 116 rue Paul Bert, Lyon 3 | 4.6/5 on Rankeat, two addresses | Rankeat |
| Dangerous Burger | 42 rue de la Claire, Lyon 9 | 1 to 10 patties, double Junk’s maximum | Le Bonbon |
| Spacefox | Lyon | Burger brand of YouTuber Amixem | Lyon Capitale |
My call: if you’re on the Presqu’île and want a straight smash burger without studying a menu, Junk is the easy pick. Want a patty-count challenge? Dangerous Burger goes up to ten. I haven’t ranked these by taste, because I haven’t eaten them side by side. And the two Smash Burger Joint addresses don’t match, so check before you go.
What the Lyon press said at the 2023 opening
The Lyon press welcomed Junk in the summer of 2023. Radio Scoop announced the opening on 19 June. Lyon Femmes tasted the burgers on 3 July, a couple of weeks in. Vivre Lyon called the menu ‘minimalist’ the next day. Those impressions are now more than three years old, and I found no newer review of the Lyon branch. That gap is why this page exists.
Junk isn’t the only founder-led burger brand growing in French regional cities. For another, read my profile of Cédric Moulot and 231 East Street in Strasbourg, a city Junk has also opened in. For the longer view, see our history of the hamburger.

Sources and methodology
I build profiles from the brand’s official pages, dated local and trade press, and public records. Every fact was checked on 16 October 2026. When a fact rests on a single source, I say so. I never carry prices over from one city to another. I haven’t eaten at Junk Lyon, so there’s no Burger Breton rating on this page. More guides are in our Restaurants section.
