Salón Mezcalli Puebla: Chef Liz Galicia's Mezcalería
Liz Galicia's Michelin-listed mezcalería in Puebla's Barrio de Analco: address, hours, what to order, and why the cemita is its closest thing to a burger.

Salón Mezcalli is chef-owner Liz Galicia’s Poblano antojería and mezcalería at C. 8 Sur 501 in Barrio de Analco, Puebla. The MICHELIN Guide Mexico 2026 lists it as a Recommended restaurant. Go for mole, seasonal chile en nogada and one of the region’s largest mezcal collections. Don’t go for a hamburger: no source shows one on the menu.
This is a profile, not a review. I have not eaten at the Analco address, so there is no rating here. I built it from the MICHELIN Guide, the restaurant’s official site, Puebla’s municipal tourism office and local food press, all checked on October 8, 2026. Where sources disagree, as they do on opening hours, I say so rather than pick one.

Who is chef Liz Galicia?
Liz Galicia is the Puebla-born chef and owner of Salón Mezcalli, and she has built her career on traditional Poblano cooking. According to Le Cordon Bleu, she graduated in 2008 from Puebla’s Instituto Suizo de Gastronomía y Hotelería (Swiss Institute of Gastronomy and Hospitality). She then worked in restaurants and hotels across Mexico.
Liz Galicia’s career timeline
Her career runs through three Puebla venues: El Mural de los Poblanos, Miel de Agave and Salón Mezcalli.
- 2008: graduates from the Instituto Suizo de Gastronomía y Hotelería in Puebla (Le Cordon Bleu).
- 2010: opens El Mural de los Poblanos at C. 16 de Septiembre 506 and serves as its executive chef (Le Cordon Bleu, Mezcalistas).
- July 16, 2019: gives a guest-chef demonstration of chicken mole poblano at Le Cordon Bleu London, describing the paste as made from about twenty ingredients.
- Date not published: founds Miel de Agave, a mezcalería and antojería at Av. 7 Pte. 110-1 in the Centro Histórico (Mezcalistas).
- Up to at least 2023: Salón Mezcalli operates inside Hotel Cartesiano (Gourmet de México).
- By November 2024: Salón Mezcalli is at 8 Sur 501 in Barrio de Analco (Revista Única).
- May 2026: Salón Mezcalli is listed as Recommended in the first MICHELIN Guide to include Puebla.
- August 12, 2026: she opens the restaurant’s chile en nogada season.
Her approach: keep the history on the plate
Liz Galicia’s cooking preserves Poblano tradition rather than reinventing it. Speaking about El Mural de los Poblanos, she told Le Cordon Bleu: “No changes have been made to the menu since opening. We don’t want to lose history.” The same instinct runs through Salón Mezcalli. Mezcal, corn and mole. No fusion.
Where is Salón Mezcalli, and did it move?
Salón Mezcalli is now at C. 8 Sur 501 in Barrio de Analco, after moving from Hotel Cartesiano in the historic center. The original bar and restaurant ran inside Hotel Cartesiano at Calle 3 Ote. 610, in Barrio de los Sapos. Gourmet de México still listed that address in April 2023. Revista Única placed it in Analco by November 2024. Nobody has published the exact date of the move, or the year the restaurant first opened.
If a directory or an older article sends you to Hotel Cartesiano, it is out of date. Use the 8 Sur 501 address from the MICHELIN Guide and the official site.

The former Hotel Cartesiano site (Calle 3 Ote. 610), El Mural de los Poblanos (C. 16 de Septiembre 506) and Miel de Agave (Av. 7 Pte. 110-1) are all within a short walk to the west and north. Why Barrio de Analco matters
Analco is one of Puebla’s oldest neighborhoods; its name comes from the Nahuatl for “on the other side of the river”. Revista Única explains that it began as an Indigenous calpulli outside the Spanish city. For a chef who refuses to modernize her menus, it is a fitting address.
Salón Mezcalli opening hours: check before you go
Salón Mezcalli’s opening hours differ between sources, so confirm by phone or through the booking page before you travel. The MICHELIN Guide lists Monday to Saturday 8:00 a.m. to 11:00 p.m. and Sunday 8:00 a.m. to 6:00 p.m. Revista Única (2024) and TableJourney give the same hours from Tuesday to Sunday but leave out Monday, which suggests a Monday closure. Every source agrees on the 8:00 a.m. opening, which fits the Poblano breakfasts.

Is Salón Mezcalli in the Michelin Guide?
Yes. Salón Mezcalli is a Recommended restaurant in the MICHELIN Guide Mexico 2026, the first edition to cover Puebla. Fourteen restaurants from Puebla state entered the guide in May 2026, according to Tus Buenas Noticias and SDP Noticias. Salón Mezcalli is one of six Recommended venues in Puebla, with Augurio, Casa Baccuza, Mural de los Poblanos, La Noria and Valiente.
Mural de los Poblanos, the restaurant Liz Galicia opened in 2010, is on the same list. That puts two of her kitchens in the city’s first Michelin selection. For Salón Mezcalli, Michelin highlights “one of the largest mezcal collections in the region”, along with mezcal flights and cocktails.
What to order at Salón Mezcalli
Order the enchiladas with mole, the seasonal chile en nogada and a mezcal flight: those are the dishes and drinks the MICHELIN Guide singles out. The menu below is split by how current the information is.
Dishes named by Michelin (2026)
The MICHELIN Guide names these dishes on its current page:
- Chile en nogada, in season.
- Chalupas, the small fried tortillas topped with salsa that Puebla is known for.
- Enchiladas with a choice of manchamanteles, green pipián or mole poblano.
- Cremita poblana with cinnamon and peppermint, for dessert.

For a first visit, I would order the enchiladas with mole poblano and nothing else to start. Mole is the dish Liz Galicia chose to cook for a London audience in 2019, and it is the clearest test of any Poblano kitchen. If it disappoints, the rest of the menu probably will too.

Dishes reported by the press (2023–2024)
These dishes appeared in earlier reviews and may no longer be on the menu. In 2023, at the Hotel Cartesiano location, Gourmet de México reported a cemita de chalupas with mole poblano, mole manchamanteles with pork belly, guacamole with chapulines (grasshoppers) and blue-corn tlacoyos. In 2024, Revista Única reported a seasonal huaxmole de caderas, a goat stew served from October 10 to December 8. If that calendar holds, the 2026 season opens around October 10, but no source I found has announced the dates.
Mezcal, pulque and other agave spirits
The drinks list is the real reason to pick Salón Mezcalli over another Poblano restaurant. Revista Única (2024) lists mezcals from Sonora, Oaxaca, Puebla, Michoacán and Jalisco, plus bacanora, raicilla and sotol, and pulque curados flavored with pinole or merengue. Gourmet de México counted more than 160 mezcal labels in 2023, at the old location. Treat that number as historical.

New to agave spirits? Order a flight, not a single pour. Three regions side by side teach you more than one good glass. The official site also books dedicated mezcal tastings.

How much does a meal at Salón Mezcalli cost?
Salón Mezcalli is mid-priced: the MICHELIN Guide gives it $$, its price symbol rather than a dollar amount. The only published per-person figure is MXN 500–600, reported by Gourmet de México in 2023 at the old Hotel Cartesiano location. Prices at the Analco address are not published online, so expect that figure to be out of date.
Do you need a reservation?
Book ahead, especially in chile en nogada season. Salón Mezcalli takes online reservations through CoverManager on salonmezcalli.mx, and you can call +52 222 337 1116. Groups can ask about the event room.
Chile en nogada season at Salón Mezcalli
Salón Mezcalli opened its 2026 chile en nogada season on August 12, 2026, with a menu by chef Liz Galicia. Chic Magazine reported that the launch was a collaboration with Talateca Mexican Pottery and that about 30 guests attended. Neither the restaurant nor the press has published an end date for the 2026 season, so call before you plan a trip around it.

Does Salón Mezcalli serve burgers?
No. No source shows a hamburger on Salón Mezcalli’s menu. It is a Poblano antojería and mezcalería, not a burger restaurant. Its closest relative to a burger is the cemita.
The cemita: Puebla’s own bun tradition
The cemita is Puebla’s signature sandwich, built on a sesame-seed roll and often called the city’s answer to the burger bun. In 2023, Gourmet de München reported that Salón Mezcalli served a cemita de chalupas with mole poblano, stuffing the roll with chalupas. Miel de Agave, Liz Galicia’s other bar, lists mini cemitas, according to Mezcalistas.

Michelin has noticed cemitas too: Cemitas Beto, a Puebla cemita shop, received a Bib Gourmand in the MICHELIN Guide Mexico 2026.

Salón Mezcalli vs. Miel de Agave vs. El Mural de los Poblanos
Liz Galicia’s three Puebla venues serve three different occasions: Salón Mezcalli for a Michelin-listed meal with mezcal, Miel de Agave for drinks and snacks, and El Mural de los Poblanos for classic Poblano dining.
| Salón Mezcalli | Miel de Agave | El Mural de los Poblanos | |

| Status (2026-10-08) | Operating, confirmed by its August 2026 event | Not verified | Listed by Michelin in 2026 |
My take: book Salón Mezcalli when mezcal is the point of the evening. Book El Mural when you want her cooking as she says it has always been served. Miel de Agave is a bar stop, and I could not confirm it is still open.
Two points remain open. Le Cordon Bleu calls Liz Galicia El Mural’s founder and executive chef, but no primary source confirms whether she still runs its kitchen or whether she is a co-owner. Le Cordon Bleu also says the restaurant was named best in Mexico by the México Gastronómico Top 120 guide. It gives no edition year, and I found no other source to confirm it.
