Maison des Cariatides Dijon: Chefs, Menus and Angelo Ferrigno
The Michelin-listed table on rue Chaudronnerie: chefs from Thomas Collomb to the Gomis couple, Angelo Ferrigno's star years, and a burger tip.

La Maison des Cariatides in Dijon is a fine-dining restaurant at 28 rue Chaudronnerie, run today by owner-chefs Marie-Cécile and Vincent Gomis. Angelo Ferrigno is not its current chef, owner or founder. He cooked there from 2012 to 2018, became head chef in 2015 and has run his own Michelin-starred restaurant, CIBO, at 24 rue Jeannin since 2020. The restaurant was founded by Thomas Collomb. It serves modern tasting menus from €59 at lunch to €139 at dinner, and it has no burger on the menu.
I wrote this because the same mistake keeps turning up. Search for the restaurant and many pages still credit Angelo Ferrigno, who left in 2018, and none of them puts the chefs in order. So I cross-checked the Guide Michelin and Gault&Millau listings, the restaurant’s official site, Le Fooding, Gilles Pudlowski’s blog and Dijon’s local press, all on 10 October 2026. This is a researched profile, not a meal review. Where the sources disagree, I say so rather than pick a side.

Who runs La Maison des Cariatides today?
Marie-Cécile and Vincent Gomis are the current owner-chefs of La Maison des Cariatides, according to the Guide Michelin and the restaurant’s own website. They took over from chef Sylvain Gauthey. Gault&Millau’s 2026 review says the change happened “two years ago”, which places it around 2024.
Who does what in the kitchen is less clear. Gault&Millau names Marie-Cécile Gomis as chef; Michelin and the official site present the couple as leading the restaurant together. I couldn’t confirm the split, so I list them as joint owner-chefs.
Sylvain Gauthey hasn’t gone far. He now runs La Table d’Eole in Brochon, a village on the Côte de Nuits wine road south of Dijon.
What the food is like: modern Burgundian cooking with Mediterranean notes
The cooking at La Maison des Cariatides is refined contemporary French cuisine built on Burgundian roots with Mediterranean influences. The restaurant’s own phrase is “modern and indulgent gastronomic cuisine, between roots and influences”. The Guide Michelin points to a recurring use of sweet spices and citrus, and singles out the seafood dishes.
Gault&Millau cites three dishes that show the style:
- Milk-fed veal tartare with a lemon-kombu sorbet and a tuna emulsion
- Confit lamb shoulder with artichoke barigoule
- Red-fruit panna cotta with verbena
In good weather there is a terrace at the back of the building, away from the street.
Maison des Cariatides menu and prices
A meal at La Maison des Cariatides costs €59 to €79 per person at lunch and €119 to €139 at dinner, drinks excluded. Those are Gault&Millau’s 2026 figures. There is no à la carte: you pick a tasting menu, and the number of courses sets the price.
If I were booking, I’d take the 5-course lunch at €59. Same kitchen, same style, €60 less than the shortest dinner menu.
Maison des Cariatides menu prices in 2026, drinks excluded (bar chart): 5-course lunch €59, 6-course lunch €79, 7-course dinner €119, 8-course dinner €139. (Chart: Burger Breton, data from Gault&Millau (2026), original work)
Opening hours and booking
La Maison des Cariatides is open Wednesday to Sunday and closed Monday and Tuesday. Lunch runs from noon to 1:30 pm according to the Guide Michelin. The sources disagree on the rest:
| Service | Guide Michelin | Gault&Millau |
|---|---|---|
| Lunch | 12:00–1:30 pm, Wed–Sun | Wed–Sun |
| Dinner | 7:00–8:30 pm, Wed–Sun | 7:30–9:30 pm |
| Sunday | Lunch and dinner | Lunch only |
Two listings, two sets of hours. Call +33 3 80 45 59 25 before you go, and book: a small tasting-menu room doesn’t keep many seats for walk-ins, and a Sunday dinner may not exist at all.
The Maison des Cariatides chefs: a dated timeline
Four chef eras define La Maison des Cariatides: founder Thomas Collomb, Angelo Ferrigno’s star years, Sylvain Gauthey, then the Gomis couple.
| Period | Who led the kitchen | Key fact |
|---|---|---|
| Founding (year unconfirmed) | Thomas Collomb | Founder of the restaurant (Gault&Millau) |
| 2012 | Angelo Ferrigno joins | Works under Thomas Collomb and Lucie Brunet (Pudlowski) |
| 2015 | Angelo Ferrigno | Becomes head chef |
| 2016 | Angelo Ferrigno | Earns a Michelin star |
| 2018 | Ferrigno leaves | Starts work on his own restaurant |
| Until about 2024 | Sylvain Gauthey | Chef before the current owners |
| About 2024 to today | Marie-Cécile and Vincent Gomis | Owner-chefs |
Three gaps remain. The founding year under Thomas Collomb is not confirmed. Neither is Lucie Brunet’s exact role. And none of the sources I checked dates the Sylvain Gauthey years precisely.
Timeline of the Maison des Cariatides chefs: founder Thomas Collomb (year unconfirmed), Angelo Ferrigno 2012–2018 (head chef 2015, Michelin star 2016), Sylvain Gauthey until about 2024, Marie-Cécile and Vincent Gomis since about 2024. Angelo Ferrigno: from Cariatides head chef to CIBO
Angelo Ferrigno is a Burgundian chef, born in 1992, who won a Michelin star as head chef of La Maison des Cariatides in 2016 and has run his own starred restaurant, CIBO, in Dijon since 2020. His is the best-known name tied to the address, which is exactly why so many pages still put him there.
Training in Burgundy
Ferrigno was born in Semur-en-Auxois to a Portuguese mother and an Italian father. He started training at 14 at CFA La Noue in Dijon, then worked at L’Hostellerie d’Aussois in Semur-en-Auxois and L’Hostellerie de Levernois near Beaune (Gault&Millau).
The 2016 Michelin star at La Maison des Cariatides
In 2016, a year after becoming head chef, Ferrigno earned La Maison des Cariatides a Michelin star. Le Fooding described him as the youngest starred chef in France at the time. His age is reported inconsistently: Le Fooding says 23, Pudlowski says 24. With a 1992 birth year, either fits depending on his birthday.
CIBO, 24 rue Jeannin
CIBO is Ferrigno’s own restaurant, opened on 11 June 2020 at 24 rue Jeannin in Dijon. He decided to go solo in 2018, aged 26, and the works took two years. The star came fast: CIBO entered the 2021 guide with one, about eight months after opening (macommune.info). The Guide Michelin still lists it with one star.
The cooking at CIBO is locavore, with ingredients sourced within 200 km (about 125 miles). It leans on Scandinavian influences, fermentation and freshwater fish. CIBO opens Tuesday to Friday and closes Saturday, Sunday and Monday. Phone: +33 3 80 28 80 76, website cibo.restaurant.
Gault&Millau France 2022 gave Ferrigno 3 toques and named him a “Grand de Demain”, its label for rising chefs.
Cave, 29 rue Jeannin
In November 2024 Ferrigno opened Cave at 29 rue Jeannin, directly across the street from CIBO, with two longtime collaborators. At opening, lunch was a 3-course menu at €30 and dinner was shared plates (Le Bonbon Dijon, 12 November 2024). I could not confirm that Cave is still open in October 2026, so check before you go.
Angelo Ferrigno career timeline, 2012–2024: joins La Maison des Cariatides (2012), head chef (2015), Michelin star (2016), leaves (2018), opens CIBO on rue Jeannin (June 2020), CIBO Michelin star (2021 guide), 3 Gault&Millau toques (2022), opens Cave (Nov 2024). La Maison des Cariatides vs CIBO vs Cave
The three tables differ most on style, price and opening days. If it’s Ferrigno’s cooking you’re after, go to CIBO, not the Cariatides. If you want the cheapest way into Dijon’s chef-led cooking, the €30 Cave lunch (if it’s still running) and the €59 Cariatides lunch are the two doors.

The building: why it’s called the Maison des Cariatides
The restaurant is named after its building, the Maison des Cariatides, also called Maison Pouffier: a listed historic monument (Mérimée record PA00112406) whose façade is carved with caryatids and atlantes. Caryatids are columns sculpted as female figures; atlantes are their male counterparts.

The house was built for the Pouffier family, a dynasty of Dijon merchants. Its sculpted façade is in the Burgundian Renaissance style associated with Hugues Sambin (Monumentum, Lonely Planet). Sources put the construction anywhere from the early 16th to the early 17th century, so I leave the date open until the official record can be checked.

That façade is why travel guides such as Lonely Planet list the address. They send visitors to look at the stonework; the restaurant just happens to be inside.

Is La Maison des Cariatides part of Dijon’s burger scene?
No. La Maison des Cariatides does not serve burgers and plays no part in Dijon’s burger scene. None of the menus, guide listings or reviews I checked mention a burger, and the restaurant never appears in local “best burger in Dijon” rankings.
If you came for a burger, the name Dijon keeps coming back to is Foodies, at 12 rue François Rude. Its founder, Julien Chauvenet, won the World Burger Contest at Sirha Lyon on 20 January 2023 with his assistant Candice Salvan. They swept it: first place, the public prize, best traditional burger and best vegetarian burger (macommune.info). One caveat: Chauvenet is the 2023 champion, not the current one. The 2025 contest went to Louis-Gautier Lepers of Papa Renard in Morzine (Lyon Capitale).
