Grilled beef burger with bacon, tomato and lettuce on a sesame bun, the style served by the best burger restaurants in Hamburg

The best burgers in Hamburg are at Dulf’s Burger. Its beef is minced in-house every day and grilled over lava stone, and it earned the top score in the burger category of the Falstaff Street Food Guide: 95/100. Billy the Butcher (94), on the fourth floor of the Alsterhaus above the Inner Alster, and Ruff’s Burger (93, scored when it still traded as Otto’s Burger) complete my top three. All ten picks follow, with addresses, neighbourhoods, signature burgers and every price I could verify on 8 October 2026.

Falstaff Street Food Guide scores (out of 100) of the Hamburg burger restaurants in this ranking: Dulf’s Burger leads with 95, Brooklyn Burger Bar closes with 87; Grilly Idol and Shiso Burger are not rated (Chart: Burger Breton (own work, CC BY 4.0), data from the Falstaff Street Food Guide, rendered with QuickChart)

How I ranked Hamburg’s burger restaurants

The order follows the Falstaff Street Food Guide score, which marks out of 100: 60 points for the food, 20 for service and 20 for the setting. When two places tie, the one I could confirm open in 2026 on its own website goes first. Grilly Idol and Shiso Burger have no Falstaff score, so they close the list. Grilly Idol takes ninth place because its 2026 opening is confirmed and its Google rating is published (4.7 from more than 2,190 reviews). I could confirm neither for Shiso.

One caveat. The Falstaff pages returned an error when I checked, so the scores come from search excerpts and I cite them without an edition year. This is a desk-built ranking, not a tasting tour: scores, official menus, dated prices and local press, cross-checked against Genussguide Hamburg (25 March 2026), hamburg-magazin.de (16 October 2025), Haspa Insider (14 March 2025) and Mit Vergnügen Hamburg (2025).

Seven of the ten are confirmed open by their official website or a 2026 source: Dulf’s, Billy the Butcher, Ruff’s, HOB’s, Grilly Idol, Brooklyn Burger Bar and Burger Heroes. For Burgerlich, WilliamsBurger and Shiso Burger, my latest sources are the 2025–2026 guides, so check the hours before you go. I left out The Burger Lab, which older English-language guides still list, because I found no sign that it is trading in 2026.

1. Dulf’s Burger: the best burger in Hamburg

Dulf’s Burger is the best burger restaurant in Hamburg: it scores 95/100 and wins the burger category of the Falstaff Street Food Guide. Founded in 2014, it now has three branches across the city.

What sets it apart is the beef. It comes from Belgian Blue and INRA 95 cattle raised on straw on a farm near Hamburg. It is minced on site every day and shaped into patties by hand, with no preservatives. The buns are baked daily. The sauces are made in-house, with a Blue Cheese Mayo and a Honey Mustard among them.

The patties go on a lava-stone grill, and the menu runs to about ten burgers, from a goat’s cheese burger to the Schlabbermax: three patties under a heap of pulled pork. My favourite detail hangs on the wall. The “Wall of Hackfleisch-Warriors” (roughly, the wall of mince warriors) honours the biggest eaters, and the record belongs to Roy, who ate 17 premium patties on 19 March 2020.

  • Addresses: Gertigstraße 57, 22303 Hamburg (Winterhude); Karolinenstraße 2, 20357 Hamburg (Karoviertel/St. Pauli); Eimsbüttler Chaussee 25 (Eimsbüttel)

2. Billy the Butcher: a butcher’s burger above the Alster

Billy the Butcher makes its burgers from its own butcher’s beef, on the fourth floor of the Alsterhaus department store with a view over the Inner Alster. Falstaff scores it 94/100.

The meat is northern German heifer beef from its in-house butcher, Beisser, part of a family tradition dating back to 1836. It is minced with 20% fat, and Wagyu raised in the Hamburg region costs a few euros more. It is also the one address on this list where I can give you a full price range, from €14 for a cheeseburger to €25 for the Strammer Max. If I wanted a burger with a view in the city centre, I would come here first.

3. Ruff’s Burger (formerly Otto’s Burger): the same burgers under a new name

Ruff’s Burger is the restaurant that most Hamburg burger lists still call Otto’s Burger. The name changed on 1 October 2025, but the owner did not: Ruff’s, a Munich chain founded by Alexander Kleinhans, had bought Otto’s more than five years earlier. The Lemon, Lime & Bitters stays on the drinks menu as a nod to the old name.

The formula has not changed either. The beef comes from the Lüneburg Heath, and the buns, cheese and sauces are made in-house without additives. Every burger comes in a meat, vegetarian or vegan version, which makes Ruff’s the easiest choice for a mixed group. Falstaff scored the Lange Reihe branch 93/100 when it still traded as Otto’s.

4. HOB’s Hut of Burger: the best halal burger in Hamburg

HOB’s Hut of Burger is where to go for a halal burger in Hamburg: all its beef is halal. Falstaff scores it 92/100, and the website says it sells about 1,600 burgers a day.

The founder, Zulfikar Hussain, is a German of Pakistani descent and a former architect. The room looks like it: 180 m² of graffiti and neon, with street art that changes over time. The patties are grilled over lava stone, and the fries are cooked twice.

  • Address: Europa Passage, 2nd floor, Ballindamm 40, 20095 Hamburg (Altstadt)

5. Burgerlich: “No ordinary hamburger” in the city centre

Burgerlich is a city-centre burger restaurant opened in late 2014 by two Hamburg restaurateurs under the motto “No ordinary hamburger”. Falstaff scores it 92/100, level with HOB’s.

You order on a tablet at your table. The regional beef is minced on site, and the buns come from a Hamburg bakery in brioche, sesame or wholemeal. I am deliberately not naming a signature burger here. Some reviews credit Burgerlich with a tuna-and-shiso burger and a Bulgogi Burger that are actually on Shiso Burger’s menu, so check the current menu before you order.

  • Addresses: Speersort 1 / Curienstraße 1, 20095 (Altstadt; Monday to Saturday 11.30 am–9.30 pm, closed Sunday); Gänsemarkt 43, 20354 (Neustadt)

6. Burger Heroes: smash burgers in Hamburg until 7 am

Burger Heroes is the place for a smash burger in Hamburg, and its Reeperbahn branch stays open until 7 am on Fridays and Saturdays. Falstaff scores it 90/100.

It has its own butcher, bakes its brioche buns on site and makes its sauces in-house. With four branches, from the Hauptbahnhof to Wandsbek, it is also the easiest name on this list to fit into a trip. Want to try the thin, crispy-edged style at home first? My colleague Clara’s Shackburger copycat recipe uses the same smash technique.

7. WilliamsBurger: burgers with Balkan flavours in Wilhelmsburg

WilliamsBurger is a Wilhelmsburg restaurant that crosses burgers with Balkan cooking. Falstaff scores it 90/100, the same as Burger Heroes.

You will spot the colourful mosaic façade from the street. Ćevapčići share the menu with the burgers, and the vegetarian Kamp-Burger is made with sweet potato and parsley. It is the one address on this list worth the trip south of the Elbe. It opens only in the evening and at weekends, though, so plan around that.

  • Address: Veringstraße 28, 21107 Hamburg (Wilhelmsburg)

8. Brooklyn Burger Bar: burgers and cocktails in a former pharmacy

Brooklyn Burger Bar is a burger and cocktail bar in a former pharmacy in the Altstadt, opened by Jan Pflüger and Steffen Schröder in October 2013. Falstaff scores it 87/100.

Come for a drink as much as for the food: it is the most bar-like address on this list. The October 2026 burger of the month, “Return of the Mac”, is a double cheeseburger with bacon and onion-and-gherkin relish on a sesame brioche bun.

  • Address: Alter Fischmarkt 3, 20457 Hamburg (Altstadt), U1 Meßberg
  • Hours: closed Monday

9. Grilly Idol: St. Pauli’s neighbourhood favourite

Grilly Idol is St. Pauli’s neighbourhood burger restaurant, with a Google rating of 4.7 from more than 2,190 reviews, according to its own website. It started as a pop-up and has been open since 2016.

The 130 g regional beef patty is cooked medium. The bacon and chicken come from Schlachterei Fricke, a butcher in Stellingen. Gluten-free buns and soy or black bean patties cover most diets. The Lunch Special starts at €14.50, the only price I could check outside Billy the Butcher. This month’s burger is the Jalapeño Popper Burger.

  • Address: Clemens-Schultz-Straße 40, 20359 Hamburg (St. Pauli)
  • Prices: Lunch Special from €14.50
  • Website: grilly-idol.de

10. Shiso Burger: Asian fusion burgers in the Altstadt

Shiso Burger serves Asian fusion burgers in Hamburg’s Altstadt. It is a franchise that started in Berlin.

The house Shiso Burger is the only fish burger on this list: a marinated tuna steak with a shiso leaf, chilli mayo and teriyaki sauce. There is also a Bulgogi Burger, a choice of Angus or Wagyu beef, and edamame and kimchi on the side. My sources give two addresses, so check which one is open before you go.

  • Addresses: Kleiner Burstah 1, 20457 and Bugenhagenstraße 23, 20095 (Altstadt)

Worth a detour: three more Hamburg burger restaurants

These three just missed my top 10. Try them if the top 10 are full or too far away.

  • Traumkuh, Grindelallee 146, 20146 (Rotherbaum): linked to Guter Bulle in Frankfurt, with house-baked buns and a burger called “Bison Sein Vater”.
  • Hensel Burger, Mühlenkamp 12, 22303 (Winterhude): hamburg-magazin.de says its menu has won an award from Der Feinschmecker, but I could not confirm this with a primary source.
  • Superbad, Bartelsstraße 7–11 (Sternschanze): a smash burger address in the Schanze.

Best neighbourhoods for burgers in Hamburg

The Altstadt has the most ranked burger restaurants (four), and St. Pauli, with three, is where to go late at night.

  • St. Pauli: Burger Heroes on the Reeperbahn, Grilly Idol, and Dulf’s in the Karoviertel. Burger Heroes is your option at 3 am.
  • Altstadt and Neustadt: HOB’s, Burgerlich, Brooklyn Burger Bar and Shiso Burger in the Altstadt, with Billy the Butcher and Burgerlich’s Gänsemarkt branch in the Neustadt. Best for lunch while sightseeing.
  • Sternschanze: Ruff’s on Schanzenstraße and Superbad.
  • Ottensen and Altona: two Ruff’s branches, the Mercado Altona counter and Burger Heroes on Bahrenfelder Straße.

Hamburg, the city that gave the hamburger its name

Hamburg gave the hamburger its name, but historians still disagree on how the name reached the United States. One theory points to the Rundstück warm, a hot bread roll filled with roast meat and gravy that was sold in Hamburg by 1869. Another credits the Hamburg steak, minced beef served to passengers of the Hamburg America Line on the way to New York.
