Arcadas Coimbra: Chef Vítor Dias at Quinta das Lágrimas
Who really cooks at Coimbra's fine-dining benchmark, what the menu costs, and where to go if you came to Coimbra for a burger.

Arcadas Coimbra is the fine-dining restaurant of the 5-star Hotel Quinta das Lágrimas, and its executive chef has been Vítor Dias since September 2015. It serves seasonal tasting menus built on produce from the region and the estate’s own garden. There is no burger on it: no menu I found from 2024 or 2025 lists one. If you came to Coimbra for a burger, skip to the burger section below or go straight to our Coimbra city page.

The Quinta das Lágrimas restaurant setting
The Quinta das Lágrimas restaurant occupies the palace’s former stables, and according to Frommer’s its arched windows open onto the gardens. Hence the name: Arcadas, the arcades. The hotel itself is an 18th-century palace in 12 hectares of gardens. It opened as a hotel in 1995, and in 2026 the estate marks 700 years of documented history.

This is also where Portugal’s best-known love story is set, the legend of Pedro and Inês. The restaurant’s nod to it is a modest one: a house ‘Pedro & Inês’ wine on the list.

Vítor Dias, the chef behind Arcadas
Vítor Dias has run the Arcadas kitchen since September 2015, when he took over at 35. Both Frommer’s and food writer Nelson Carvalheiro (December 2016) give that start date. Ten years on he is still there: Lux and Estórias Magazine credit him with the 30th-anniversary Autumn-Winter menu of late 2025.
He cooks the region first. The hotel calls it ‘cuisine with a soul’, built on herbs, vegetables and fruit from the estate’s Chef’s Garden and orchard. Forbes Portugal (July 2024) fills in the rest of the supply chain: rice from the Mondego valley fields, fish landed at Figueira da Foz, produce from nearby farms.

What a Vítor Dias menu looks like
The summer 2024 menu is the clearest picture of his style I found. Short names, local products and, to my reading, one sharp contrast per plate. Forbes Portugal described three of the dishes:
- O Ovo: pea stew, pork cracklings and an organic egg.
- A Gamba: prawn tartare, soft-shell crab, yuzu and Fundão cherry.
- Herança: confit cod, Cadima lupin and coconut cream.
Fundão cherries and Cadima lupins both come from central Portugal. Yuzu and coconut are the outsiders. That balance, mostly the region with a few foreign accents, runs through every menu I read.
Arcadas then and now: a timeline
Arcadas went from a Michelin-starred table under Albano Lourenço to a regional tasting-menu restaurant under Vítor Dias. Several aggregators still list Lourenço as the current chef. They are about a decade out of date. Here is the sequence the sources support.
| When | What happened | Status |
|---|---|---|
| 1995 | Quinta das Lágrimas opens as a hotel | Historical |
| Before 2015 | Albano Lourenço runs the kitchen; German chef Joachim Koerper consults; Arcadas holds one Michelin star | Historical (exact years unconfirmed) |
| September 2015 | Vítor Dias, 35, takes over the kitchen | Current chef |
| July 2024 | Summer menu with O Ovo, A Gamba and Herança | Past menu |
| Autumn 2025 to spring 2026 | 30th-anniversary menu at €95, tribute to Lourenço and Koerper | Ended March or April 2026 |
| 2026 | The estate marks 700 years of documented history | Current |

The Michelin star under Albano Lourenço
Arcadas held one Michelin star when Albano Lourenço was chef, with Joachim Koerper as consultant. It does not hold a star now. One blog dates the star to 2005–2013, and a Portuguese news snippet says it was lost in the 2013 guide. I could not confirm either against the Michelin Guide itself, so I give no years here.
The 30th-anniversary menu
For the hotel’s 30 years, Vítor Dias wrote an Autumn-Winter menu in tribute to Albano Lourenço and Joachim Koerper. It cost €95 per person without drinks, plus €35 for the wine pairing, and ran until March or April 2026, according to Lux and Estórias Magazine. Dishes included:
- Fish soup with Algarve prawns.
- ‘C.L.P.’: shrimp, lobster and turbot.
- Slow-braised oxtail with truffle potato.
- Burnt-milk cream with thyme ice cream.
A chef paying tribute to the predecessor everyone still confuses him with is a gracious move. It also says a lot about how much that star still weighs on the house.
Is Arcadas worth booking? Fine dining in Coimbra
Yes, if you want a regional tasting menu in a historic setting: Arcadas is the obvious fine-dining choice in Coimbra. The hotel says La Liste ranks it among the world’s 500 best restaurants, and Lifecooler repeats the claim. I could not find which La Liste edition that refers to, so read it as the hotel’s claim, not mine.
My view: book it for three things, the setting, the garden-driven cooking and a Dão and Bairrada list that is hard to drink this well outside Portugal. Don’t book it for a quick bite or a casual dinner, which is not what it does. And call before you go, because current 2026 prices and opening hours are not on the official site.
Where to eat a burger in Coimbra instead
Arcadas has no burger, so for the best burgers in Coimbra you need to cross the river into town. Local media report these four spots, each from a single source:
| Burger spot | Where | What the source says | Source |
|---|---|---|---|
| Honorato | Rua João de Deus Ramos 145 | Open daily 12:00–24:00 | Lifecooler |
| Porreiro | Near Praça da República | Takeaway and delivery only; potato bread, ‘Xuning’ sauce | Echo Boomer |
| Casa das Caldeiras | Rua Padre António Vieira | Listed for burgers | Lifecooler |
| Hamburgueria de Coimbra | Rua Manso Preto 5, Celas | Closed Sundays | Lifecooler |

How I researched this profile
I built this profile from the hotel’s official Arcadas page, Portuguese food and lifestyle press, and travel guides, all checked on 8 October 2026. I did not eat at Arcadas for this piece, so there is no rating. Where sources disagreed or could not be confirmed, I said so or left the fact out. I also checked a lead naming a ‘João Alves’ as chef at Arcadas: no source supports it, and the only João Alves in Coimbra’s records is Bishop João Alves (1925–2013), Bishop of Coimbra from 1976 to 2001, who has no link to the restaurant.
