K’u’uk is a Yucatecan fine-dining restaurant in Mérida, not Cancún. Chef Pedro Evia and his partner Eduardo Rukos opened it in 2012 at Avenida Rómulo Rozo 488, Colonia Itzimná, and it serves tasting menus built on ancestral Yucatec Maya cooking techniques. No burgers. I checked every current fact below against the official site, kuukrestaurant.com, on 15 October 2026.
Not to be confused. If you searched for K’u’uk in Cancún, or for Roberto Alcocer’s K’u’uk, you have hit two mix-ups at once. K’u’uk has never been in Cancún, and its founding chef is Pedro Evia. Alcocer is a respected chef with no documented link to K’u’uk: he cooks at Malva in Valle de Guadalupe, Baja California, and at Valle in Oceanside, California (El Restaurante, 26 March 2026). Valle earned a Michelin star in 2023 and kept it in 2024, and Alcocer was a James Beard Best Chef: California semifinalist in 2025 (Mission Pacific Hotel).

Who is Pedro Evia, the chef behind K’u’uk?
Pedro Evia is a self-taught Yucatecan chef who co-founded K’u’uk in 2012 and is still listed as its chef. He learned on the job under chef Marcos Meneses and made four study trips to Italy, according to a 2020 profile in MID City Beat.
His partner, Eduardo Rukos, is named on the official site as director and head of research. The site also lists Miguel Benítez and pastry chef Karla Fernández on the team; Benítez’s exact role is not stated.
Evia’s work now reaches beyond Yucatán. In 2022 he opened Q78 Gastromezcal at Calle Villalar 6 in Madrid: about 240 mezcals, and dishes such as cochinita tortas (El Universal, May 2022, updated March 2023). How much of 2026 he spends at the K’u’uk stove, no source says.
Pedro Evia’s other restaurants
Evia has also been linked to several Mérida venues. These mentions date from 2020, and I have not confirmed that each one is still open:
- Kiwiik, a breakfast spot, with Eduardo Rukos
- La Piñuela, in downtown Mérida, with Eduardo Rukos
- Sensei, Time and Cosa Nostra (Cosa Nostra opened in 2010)
- Q78 Gastromezcal, Madrid (opened 2022; current status not checked)
What K’u’uk serves: contemporary Yucatecan cuisine
K’u’uk serves contemporary Yucatecan cuisine rooted in Maya technique. The restaurant calls itself a sanctuary for researching, celebrating and reviving ancestral Yucatec Maya cooking, and it means the research part: one of its two founders carries the title head of research.
There are two ways to eat here. The main one is the experiential tasting menu. Alongside it, K’u’uk serves traditional Yucatecan dishes meant for sharing at the table.

How many courses is the K’u’uk tasting menu, and how much does it cost?
Neither figure is public. The official site publishes no prices, and the “11 courses” some aggregators quote has no primary source behind it. Ask for the price in Mexican pesos when you book.
Does K’u’uk have a Michelin star?
No. K’u’uk is not among the Yucatán restaurants awarded a Michelin star in 2026. The Michelin Guide Mexico 2026 covered Yucatán for the first time, at a ceremony in Guadalajara on 20 May 2026. The region’s three one-star restaurants are Huniik and La Barra de Huniik, both by chef Roberto Solís in Mérida, and Ixi’im at Chablé in Chocholá (Diario de Yucatán; Yucatán Magazine).
One loose end. K’u’uk’s own website mentions Michelin recognition that does not match the published 2026 results, and El Universal calls K’u’uk “present in the Michelin Guide” without naming a distinction. Until the guide itself confirms something, I state none here: no star, no Bib Gourmand, no “recommended” listing.
Earlier awards for K’u’uk
K’u’uk’s best-documented awards date from its first years, and all of them come from a single secondary source, MID City Beat (2020). According to it, K’u’uk was named No. 1 new restaurant in Mexico at the Travel + Leisure Gourmet Awards 2013 and made Food & Wine’s “100 restaurants worth a pilgrimage” list. It was nominated for best tasting menu in Mexico in 2014. In 2015, Evia was invited to cook a Marché du Film dinner in Cannes.
Best fine dining in Mérida, Yucatán: K’u’uk vs Huniik vs Ixi’im
Huniik holds Mérida’s Michelin star; K’u’uk has been the city’s reference for research-led Yucatecan cooking since 2012. Here is what the record shows:
| K’u’uk | Huniik / La Barra de Huniik | Ixi’im | |
|---|---|---|---|
| Location | Colonia Itzimná, Mérida | Mérida | Chablé, Chocholá |
| Chef | Pedro Evia (founder) | Roberto Solís | Not confirmed |
| Michelin 2026 | Not among the one-star restaurants | One star | One star |
My take: if the star is what you are chasing, book Huniik. If you want the kitchen that put ancestral Maya technique on Mérida’s fine-dining map more than a decade ago, and is still run by the two people who opened it, book K’u’uk. Ixi’im means a drive out to Chocholá, so plan it as its own outing.
Is K’u’uk in Cancún?
No. K’u’uk has one location, in Mérida, and I found no branch in Cancún. Both cities are on the Yucatán Peninsula, but Cancún is on the Caribbean coast and Mérida is far to the west, so from a Cancún hotel this is an overnight trip or a very long day. I have not verified an exact road distance, so I do not quote one.

Should K’u’uk be on a burger lover’s Yucatán itinerary?
Yes, as the fine-dining night of the trip, not as a burger stop. Neither the official site nor any press I found lists a burger. Go for Yucatecan flavours you will not find on a bun, then let our guides handle the burgers.

How I built this profile
This profile is built from documents, not from a meal at K’u’uk. On 15 October 2026 I checked the official site for the address, hours, team and concept. The 2026 Michelin results come from the Diario de Yucatán and Yucatán Magazine, Evia’s background and early awards from MID City Beat, and Q78 in Madrid from El Universal. Anything I could not trace to a primary or reputable press source is left out: the tasting-menu price and course count, a Two Knives award at the Best Chef Awards 2024, a World’s 50 Best Discovery listing, an OAD 2025 ranking and a World’s Best Wine Lists rating.
