What's on a Whopper? Ingredients, History and a Copycat Recipe
What's on a Burger King Whopper: the official build, how the flame broiler works, its 1957 Miami origin, how it changes abroad, and a smoky copycat recipe.

A Burger King Whopper is a flame-grilled beef patty on a toasted sesame bun with mayonnaise, ketchup, lettuce, tomato, pickles and raw onion. That is the US ingredient list Burger King itself puts out: 100% flame-grilled beef, tomatoes, lettuce, mayo, ketchup, pickles, onions and a sesame bun (KSHB). No cheese, unless you order a Whopper with cheese. James McLamore created it in Miami in 1957 and sold it for 37 cents. My take, after going through the official builds market by market: the toppings are ordinary. The flame is what makes it a Whopper, and that is why my copycat method below starts with the grill, not the sauce.
Whopper ingredients: what is on a Whopper?
The standard Whopper stacks nine layers: sesame crown, mayonnaise, lettuce, tomato, onion, ketchup, pickles, one flame-grilled beef patty and the sesame heel.
Burger King France publishes the stacking order, top to bottom, and it is the most precise official build I have found (burgerking.fr, checked 7 October 2026):
- Sesame bun crown
- Sauce
- Lettuce
- Two slices of fresh tomato
- Fresh onion rings
- Ketchup
- Pickle slices
- Flame-grilled beef patty
- Sesame bun heel
That order is the smartest thing about the burger. The patty sits directly on the heel, so its juices soak into the bottom bun. The cold, wet toppings stay up top under the crown, away from the heat.

How much does the Whopper patty weigh?
In the US, the Whopper patty is 4 oz of beef, about 110 g or a quarter pound, according to Wikipedia citing BK.com (Wikipedia). Burger King France publishes no patty weight, so I wouldn’t assume the same figure holds there.
Is the Whopper sauce mayonnaise?
In the US, yes: Burger King lists mayo as a Whopper ingredient. In France, the official page only says “a creamy sauce” (“une sauce onctueuse”) and never calls it mayonnaise. The French recipe is not public, and I won’t guess at it.
Does a Whopper have cheese?
No, the classic Whopper has no cheese. Neither the US ingredient list nor the French build includes it. Cheese is an add-on, as in the Hungry Jack’s Whopper Cheese line I rebuilt in my Triple Whopper Cheese copycat recipe.
Whopper calories and allergens
The French Whopper has 629 kcal per burger, according to Burger King France. That is the only official figure I could verify. The US nutrition page on bk.com wouldn’t load for me, so you won’t find a US number here.

Declared allergens in France are celery, sesame, egg and gluten. The page also warns of possible traces of soy, tree nuts, mustard and milk (burgerking.fr).
How Burger King flame-grills the Whopper
Yes, the Whopper really is cooked over a gas flame. A conveyor broiler carries the patties over gas burners. The underside touches the flame directly, while the top cooks from the heat of refractory bricks above. That is where the grill marks come from (Wikipedia, Flame broiler).

The machines are made by Duke Manufacturing and Nieco. Each product has a preset time, and a cycle runs about 2 to 4 minutes. One Duke broiler cooks 8 Whopper patties in 4 minutes, according to Tasting Table and Food Republic. Those are secondary sources, not Burger King documents.

For a home cook, the lesson is simple. Fat drips onto a live flame, the flame turns it into smoke, and that smoke is the Whopper’s flavor. A flat-top griddle can’t do that. Neither can a pan, however hot you get it.
Whopper history: when was the Whopper invented?
The Whopper was invented in 1957 by Burger King co-founder James McLamore and launched at the first Burger King in Miami, Florida, for 37 cents (Wikipedia).

McLamore had watched a competitor in Gainesville, Florida, do well with a large burger, so he built a bigger one. He chose the name “Whopper” to suggest something big. At 37 cents, it cost more than twice as much as a 15-cent McDonald’s hamburger (Chowhound).

The company itself was only a few years old. Keith Cramer and Matthew Burns founded Insta-Burger King in Jacksonville in 1953. McLamore and David Edgerton bought it and renamed it Burger King in Miami on 4 December 1954 (Wikipedia, History of Burger King).

Whopper, Whopper Jr., Double and Triple: what’s the difference?
The Whopper Jr. is the smaller version, created in 1963 in Puerto Rico. The Double and Triple Whopper keep the same build with two or three patties (Wikipedia). For a home version of the double stack, see my Ultimate Double Whopper copycat recipe.
The Moldy Whopper and the no-artificial-preservatives push
On 19 February 2020, Burger King launched the Moldy Whopper campaign: a time-lapse of a Whopper made without artificial preservatives growing mold over 34 days (AOL). Selling a burger by showing it rot was a real gamble. I think it is the bravest ad the brand has run, and nobody could miss the message: no artificial preservatives.
New Whopper 2026: what changed?
In late February 2026, Burger King launched an updated Whopper in more than 7,000 restaurants in the US and Canada, with a more premium bun, a creamier mayo with sweet and lemony notes, and a clamshell box instead of a paper wrap. The patty did not change (CP24/CNN).
Tom Curtis, president of Burger King US and Canada, put it this way: “It’s like we’re putting our famous iconic burger in a tuxedo instead of a leisure suit.” The extra cost is estimated at US$4,000 a year per franchisee (The Takeout). Note what Burger King left alone: the beef. In my view that was the right call, because a flame-grilled patty is the one thing a griddle chain can’t copy. I found nothing confirming the same update in France or Spain.

Is the Whopper different in other countries?
Yes. The core build travels, but the brand name, the meat, the sauce and the specials change by market. Here is what I could verify from dated sources.

The Whopper in Australia: Hungry Jack’s
In Australia, the Whopper is sold under the Hungry Jack’s brand and made with Australian flame-grilled beef. Hungry Jack’s published a Whopper nutrition guide dated 17 February 2026 (Hungry Jack’s). My two Hungry Jack’s copycats, the Ultimate Double Whopper and the Triple Whopper Cheese, start from that base.

India, Israel and Japan: the most unusual Whoppers
India, Israel and Japan show how far the Whopper can bend. In India, Burger King serves no beef for cultural reasons, so the Whopper comes in mutton, vegetarian and chicken versions (Fox News). In Israel, kosher Burger King restaurants skip dairy entirely (Wikipedia). Japan went furthest. Its 2012 Kuro Burger had a bun and cheese blackened with bamboo charcoal, plus a squid-ink sauce (SoraNews24).

Plant-based Whoppers: Impossible, Rebel and Veggie
Burger King sells a meatless Whopper in the US, across Europe and in India. The US got the Impossible Whopper, made with an Impossible Foods patty, in August 2019. Europe got the Rebel Whopper (soy, wheat, vegetable oil, onion and spices), launched at the same time in 25 countries and more than 2,500 restaurants, Spain included (Directo al Paladar). France lists a Veggie Whopper, and India has the Veg Whopper.

Copycat Whopper recipe: how to make a Whopper at home
To make a Whopper at home, grill a thin 4 oz (113 g) beef patty over a live flame and stack it in the official order: heel, patty, pickles, ketchup, onion, tomato, lettuce, mayo, crown. This is my own reproduction, not Burger King’s formula. The weights and heat levels are my working assumptions, because the chain doesn’t publish them.
On 31 March 2020, during lockdown, Burger King France posted Whopper ingredient posters on Facebook and Twitter so people could rebuild it at home (Tom’s Guide FR). The posters list components, not quantities. The grams below are mine.
Makes 2 burgers. Allow about 15 minutes of prep, 15 minutes of chilling and 5 to 6 minutes on the grill once it is hot.
Ingredients for 2 Whoppers
- 8 oz (227 g) ground beef, 80/20, well chilled, split into two 4 oz (113 g) balls
- 2 sesame seed buns, about 5 in (13 cm) wide
- 2 tbsp (28 g) mayonnaise
- 2 tsp (10 g) ketchup
- 4 slices ripe tomato, about ¼ in (6 mm) thick
- 1 cup (40 g) iceberg lettuce, shredded
- 6 thin rings white onion
- 6–8 dill pickle chips
- Salt and pepper
Equipment
- Charcoal or gas grill (a live flame is the whole point)
- Instant-read thermometer
- Parchment paper and a flat-bottomed plate for pressing
Whopper step by step
Follow these six steps in order. The patty cooks in a few minutes, so prep every topping first.
1. Prep the toppings
Slice the tomato and onion, shred the lettuce and lay out the pickles before you light the grill. Keep everything cold until assembly.
2. Shape thin, wide patties
Press each 4 oz (113 g) ball between parchment into a 5½ in (14 cm) disc. Make it slightly wider than the bun, because it shrinks on the grill. Press a shallow dimple into the center and chill for 15 minutes.

3. Heat the grill hot
Heat the grill to roughly 450–500°F (230–260°C) and oil the grates. You want flare-ups when the fat drips. That is where the smoky, broiler-style flavor comes from.
4. Flame-grill the patties
Season both sides with salt and pepper. Grill directly over the flame for about 2 to 3 minutes per side, without pressing, until the inside reaches 160°F (71°C), the USDA safe minimum for ground beef. Toast the cut sides of the buns at the edge of the grill for the last 30 seconds.

5. Stack in Whopper order
Build from the bottom: heel, patty, pickles, ketchup, onion rings, two tomato slices, lettuce, then the crown spread with mayo. This is the official Burger King France order, read from the bottom up.

6. Rest and serve
Rest the burger for one minute so the bun absorbs the juices, then serve it right away. A Whopper doesn’t wait well, because the hot patty quickly wilts the lettuce.
