2. Prep the cold toppings

Dice the onion fine. Slice tomato thick. Shred the iceberg. Count out 6 pickle slices per burger. I keep everything cold and dry so the hot patties stay crisp.

3. Toast the buns

4. Sear the patties

Heat the griddle over medium-high heat until very hot. Sear in batches without crowding, 3 to 4 minutes per side. I press once lightly at the start only. Check 71°C / 160°F in the center with a thermometer.

5. Add mustard, never mayo

Spread about 1 Tbsp yellow mustard on the top toasted bun per burger. Add pickles on the mustard so they stick. This mustard-only layer is the signature; I add no mayo or ketchup for the standard build.

6. Stack three high and serve
