  • 4 thin tomato slices

Step by step: Sonic-style jalapeño doubles at home

I smash thin patties hot and fast, melt the cheese on the griddle, and assemble right away. Soft bun, gooey cheese. Do not wait around.

1. Mix the spicy mayo-style sauce

This sauce is the creamy heat in my copycat; it is not Sonic’s official sauce. I whisk 1/3 cup mayonnaise with 1 Tbsp hot sauce, 1 tsp jalapeño brine, garlic powder, and smoked paprika. I chill it 15 minutes. It makes about 1/2 cup — enough for 2 burgers with extra for dipping.

2. Prep the jalapeños and vegetables

Pickled rings give steady heat and crunch with no extra grilling. I drain 32-48 rings and pat dry. I shred the lettuce, slice tomato and onion, and lay out the pickle chips. Everything stays cold until assembly.

3. Divide and season the beef

Thin 4-oz patties sear fast and stack like a drive-in double. I divide 1.1 lb / 500 g cold 80/20 beef into 4 loose balls of about 113 g. I do not overwork the meat. Salt and pepper go on just before the smash.

4. Toast the buns

Butter-toasted buns hold up to double patties and spicy mayo. I butter the cut sides with 1 Tbsp soft butter. I toast cut-side down in a skillet over medium heat for 1-2 minutes until golden, then set aside. For a softer crumb, use my soft homemade burger buns.

5. Smash-sear the patties

A hard smash on ripping-hot steel makes the crisp edges. I heat a cast-iron skillet or griddle over medium-high to 450°F / 230°C. I add 2 beef balls, smash firmly to 1/4-inch / 6 mm, and cook 90 seconds. I flip, cook 60-90 seconds more. Ground beef must reach 160°F / 71°C inside. 6. Melt the cheese

Cheese melted on the griddle actually sticks to the patty. I lay 1 slice American cheddar on each hot patty right after the flip. I add 1 Tbsp water at the edge and cover 30 seconds. Pepper jack melts slower, so give it 45 seconds.

7. Assemble the double cheeseburgers

Hot patties go straight onto sauce so the cheese stays melted. For each burger I spread 1 Tbsp spicy sauce on bottom and top bun. I add pickles, onion, lettuce, tomato, then 2 cheesy patties. I top with 8-12 jalapeño rings and close. Rest 1 minute, then serve.
