Osso Lima is two places, both run by butcher-chef Renzo Garibaldi. For dry-aged meat, book the flagship at Av. Santo Toribio 173 in San Isidro, No. 44 on Latin America’s 50 Best Restaurants 2025. For a burger, skip it. Head instead to Osso Burger, a smash burger counter on the 5th floor of the Real Plaza Salaverry food court in Jesús María, where the launch-era menu ran from S/22 for a Clásica to S/29 with cheese and bacon. Those prices are about three years old, and I flag below every fact I could not confirm as of 25 October 2026.

Osso Lima at a glance: steakhouse vs. burger counter

Osso Lima means the San Isidro steakhouse; Osso Burger is its separate, much cheaper smash burger counter. Most English-language pages blur the two, and plenty still send you to the old La Molina address. Here is the split.

Who is Renzo Garibaldi?

Renzo Garibaldi is a Peruvian chef who retrained as a butcher, then founded Osso in Lima in 2013. Forbes Perú described him as Osso’s founder and creative director in September 2026 (Forbes Perú).

From restaurant kitchens to butchery training

Garibaldi cooked first and became a butcher later. According to Roads & Kingdoms, he worked the line at Sushi Samba in Miami, Costanera 700 in Lima and La Mar in San Francisco before training under three butchery masters:

  • Joshua Applestone, Fleisher’s, New York (also cited by 50 Best)
  • Ryan Farr, 4505 Meats, San Francisco
  • The Chapolard brothers, charcuterie makers in Gascony, France

Back in Peru, he started out as a butcher making artisanal chorizo (50 Best). That order matters. Osso is a butcher’s project that grew into restaurants, not a restaurant that put a meat counter by the door for show.

The dry-aging obsession

Garibaldi made his name by aging beef far past the usual 21 to 60 days. In 2014, Roads & Kingdoms reported cuts aged for 200 days, and he compared the result to “the difference between a boxed wine and a 30-year-old Bordeaux.” The quote is twelve years old. The obsession isn’t: dry aging is still the heart of Osso.

How Osso started: a butcher shop in La Molina (2013)

Osso was founded in Lima on 26 July 2013 as a butcher shop, not a restaurant (Forbes Perú). The name is Italian for bone, and the house motto, as 50 Best and Forbes Perú report it, is “without bones, there’s no meat.”

The original carnicería was at Calle Tahití 175, La Molina, opened by Garibaldi and his wife Andrea, according to Roads & Kingdoms. The tasting dinners in the back room came later, once Gastón Acurio and Mitsuharu Tsumura started telling their contacts about the shop. La Molina is the 2013 address. Don’t plan a visit around it; go to San Isidro.

Garibaldi summed up the shift himself to Forbes Colombia in 2024: “Iniciamos como una carnicería… terminamos siendo un restaurante con una pequeña carnicería” (“We started as a butcher shop… we ended up as a restaurant with a small butcher shop”).

Osso San Isidro: the Lima butcher restaurant on the 50 Best list

The Osso steakhouse in San Isidro is the restaurant to book for dry-aged meat in Lima. It opened in 2016 with 170 seats, according to Forbes Colombia, at Av. Santo Toribio 173, near the Swissôtel.

Latin America’s 50 Best ranking history

Osso is on the current Latin America’s 50 Best Restaurants list, at No. 44 in the 2025 edition. That list was announced on 2 December 2025 in Antigua Guatemala, and Osso came back after missing the previous edition.

2015 First appearance Guia do Hambúrguer
2022 No. 38 Peru Retail
2025 No. 44 (re-entry) 50 Best, Forbes Perú

Peru also has its own awards. At the Premios Summum 2024, “Osso Restaurante” ranked No. 11 of the 15 best sangucherías and hamburgueserías in Peru. It was the first year of that category, and La Lucha won it (Peru Retail).

Osso Burger Lima: the smash burger counter

Osso Burger is Garibaldi’s fast-casual spin-off: smash burgers at food-court prices in Real Plaza Salaverry, Jesús María. It started in 2021 in Punta Hermosa, the beach district south of Lima. That location has since closed. The brand moved into the mall in early 2023, according to Peru Retail (27 January 2023).

The launch menu had six smash burgers, five beef and one fried chicken, under the tagline “Muerdo, luego existo” (“I bite, therefore I am”). In the company’s own words to Peru Retail, Osso uses naturally raised animals without hormones or antibiotics, and no nitrates, nitrites, preservatives or colorants.

Osso Burger menu and prices (PEN)

A burger at Osso Burger cost between S/22 and S/29 on the launch-era menu. The prices below come from El Comercio Provecho, in an undated article that most likely dates from the 2023 opening. I could not verify 2026 prices, so check the counter or a delivery app before you go.

What to order: the Lomo Saltado Smash

If you only get one burger, make it the Lomo Saltado Smash. It puts Peru’s favorite stir-fry on a bun: sautéed onion, tomato and ají amarillo, with cilantro mayo and lettuce. El Comercio describes it, and Living in Peru independently lists it among the city’s best burgers. I’d take it over the Clásica for a simple reason: you can get a cheeseburger anywhere, but not this.

The Picaronera Smash nods to picarones, Lima’s sweet-potato and squash fritters, and comes with Chinese-onion aioli, cheddar, smoked bacon and lettuce. For a straight classic, the guide site Joinnus describes the cheeseburger as a toasted bun, a 120 g patty, lettuce, tomato, cheese and a house “animal sauce.” Joinnus is the only source for that patty weight.

Is the beef in Osso Burger dry-aged?

I could not confirm that Osso Burger in Lima uses dry-aged beef. The only documented dry-aged smash burger from Garibaldi is the 2020 Osso Smash House in São Paulo, a delivery-only kitchen near Pinheiros that sold four double burgers at R$14.90–19.90, made from beef aged at least 21 days (Guia do Hambúrguer). Its current status is unknown. Hunting for a dry-aged burger in Lima? Ask at the counter. Don’t assume.

How Osso Burger compares with Bembos

Osso Burger is a chef’s take on the smash burger; Bembos is Lima’s home-grown fast-food chain, founded in 1988. They meet on the same kind of food-court floor, but the menus pull in different directions: Osso Burger builds its burgers on Peruvian dishes and a butcher’s sourcing pledge. My colleague Noah’s Bembos brand profile covers the chain’s history and numbers.

Practical info: visiting Osso Lima and Osso Burger

Two warnings before you go. Osso’s official site (osso.pe) returned a 404 when I checked on 25 October 2026, and the published opening hours conflict. Confirm on Osso’s official Instagram or Google listing, or on @osso_burger for the counter.

  • Osso (steakhouse): Av. Santo Toribio 173, San Isidro, Lima, near the Swissôtel. I could not confirm current hours or the reservation policy from an official source, so check Osso’s Instagram or Google Business page before you go.
  • Osso Burger: Real Plaza Salaverry food court, 5th floor, Av. Gral. Felipe Salaverry 2370, Jesús María, Lima. El Comercio lists 13:00–21:00. The directory Limeo lists 12:00–22:00, and until 23:00 on Fridays and Saturdays.
  • Budget: a Clásica with fries came to S/29 at launch-era prices (S/22 + S/7).
  • Other Osso products: Forbes Colombia reports that Osso meat products are also sold in Peruvian supermarkets.

Osso beyond Lima: São Paulo, Bogotá, Medellín and Santiago

Osso now operates in Brazil and Colombia, and a Chilean location is in development.

  • São Paulo, Brazil: Rua Bandeira Paulista 520, Itaim Bibi, listed in the MICHELIN Guide. It is an honorable mention in our best burgers in São Paulo ranking.
  • Bogotá, Colombia: reported as open, though I found no dated source giving its address.
  • Medellín, Colombia: opened in El Poblado in 2026 (Foodie CL).
  • Santiago, Chile: in development on the Casacostanera rooftop in Vitacura with Antonio Bloise, founder of Santa Brasa. Both Forbes Perú and Diario Financiero describe it as a partnership, not a franchise.

Some older sources mention an Osso in Miami. I found no evidence that it is open today, so I left it out.

My take: from butcher shop to burger counter

Is Osso worth your time in Lima? Yes, as long as you pick the right door. Book San Isidro for dry-aged meat at 50 Best level. Go to Real Plaza Salaverry for a S/26 Lomo Saltado Smash at lunch. What links the two is a butcher’s respect for the whole animal, not a shared patty. My one reservation: nothing I found shows Garibaldi’s aged beef reaching the mall. Until the counter says otherwise, treat Osso Burger as a well-built Peruvian smash burger, not a cheap back door into a 50 Best kitchen. Even so, it’s notable. A chef with a ranked steakhouse took the smash burger seriously enough to make it taste of Lima. For more burger stops in the city, see our Lima burger city page, or browse the full Restaurants section.
